meHi! I’m Ashley. I’m a high school English teacher, freelance writer, feminist, wife, avid reader, and doggy mom. I live in the Chicago suburbs with my husband, Tim, and our two dogs, Penny and Bailey.

I also love to eat, and I love to cook. So that works out.

When I graduated high school, my dad had a pretty bad heart attack. After that, I decided that it was time to get healthy, so I became a vegetarian. Because my college campus had some of the best food around (no joke – our cafeteria was amazing), being a healthy vegetarian wasn’t hard at all. I got balanced meals because they were prepared for me! When I graduated college and got my first job and my first apartment, I kept up the vegetarian eating. It was cheaper and easier than learning a whole new way of cooking and eating. I was pretty healthy about it, if I do say so myself.

Soon after, I switched jobs, moved, started grad school, and met my husband. He was not a vegetarian, so when we ate together, we mostly consumed things like pizza and pasta because those are easy meals to add meat or take it away. That was all fine and good when we were eating together about twice a week, but when we moved in together, it was a different story. When that’s all you can eat together, it’s a lot more difficult to be healthy. Add to that the fact that he is a marathon runner and needs more sustenance than most vegetarian meals could give him and you have a recipe for disaster. Awful pun intended.

It wasn’t very long after we moved in together that I started breaking out with acne (which I have never had problems with before), wanting to sleep all the time, and generally feeling like I just didn’t want to do anything at all. I tried everything besides changing my diet. That was, until one of my good friends started espousing the greatness that is the Paleo lifestyle.

So, I decided to go for it. As a teacher, I have summers off, so there is no better time to change your life and your menu plan. I bought some cookbooks, looked into shopping at farmer’s markets, and got my husband on board.

Guess what? I feel great, my skin looks fantastic, most of these recipes are much easier than what I was doing before because there are not many ingredients to mess with, and I’m finding a love for a whole new set of food.

This site is to share some recipes and chronicle how I’m feeling as the school year progresses. I’m hoping this new lifestyle continues to have much to offer me.
