Paleo Pick-Me-Up: Iced Chai Tea “Latte”

The thing I miss most about Paleo is my specialty coffee. I don’t often go to coffee shops since I stopped drinking coffee about a year ago – well before going Paleo – but every fall, I love my chai tea lattes and my pumpkin spice lattes. I haven’t perfected the pumpkin spice latte yet (though I think I might try it with chai tea instead of coffee to reduce the caffeine…), but I believe I have perfected the iced chai tea latte.

This is a super quick and easy recipe that could be made quicker and easier if you brewed the tea in advance and put it in your fridge to cool for several hours.

Ingredients:

1 cup chai tea (any kind works), brewed according to directions
a generous handful of ice cubes
about 1/4 cup coconut milk (to taste)
about 2 teaspoons honey (to taste)

Directions:

Hot brew your chai tea according to the directions on the package. Brewing it strong will enhance the flavor, if that’s what you want. Meanwhile, add a bunch of ice cubes to a mason jar or other beverage receptacle. Pour your hot tea over the ice cubes and let cool. Be sure to leave some room at the top for your coconut milk. Once cool, add the coconut milk, honey, and more ice cubes if it still isn’t chilled to your liking. Put the lid on the mason jar and shake it up. Then, enjoy!
